It all started with an Eggplant Parm recipe. All's well that ends well it must be, that i adapted the basic method and ingredients that it requires for the eggplant in almost anything that one can fry. First, I tried plain fried parmesan-crusted eggplant dipped in mayo-garlic-lime. Then there was the pork chops dipped in mayo-mustard-lemon. Very recently, we tried it on Tilapia.
crusty, crunchy, tasty! anyway..here's the recipe. i know i have requests from my FB friends and i meant to keep my promise that i will post it on my blog. here!:)
Ingredients
1 small eggplant, cut into 3/4 inch thick slices
1 cup flour
1 egg
1 cup Panko bread crumbs [i also use plain, no sugar cereals or oatmeal!] mixed with 1 cup freshly grated Parmesan cheese
1 cup extra virgin olive oil for frying
1 1/2 cups shredded mozzarella cheese
1/4 cup marinara sauce or any red sauce of your preference
1/4 teaspoon crushed red pepper flakes
HOW_TO
In a small bowl beat the egg. Mix the bread crumbs and parmesan cheese together in shallow dish. In another shallow dish, dredge eggplant slices in flour. Dip in egg then in crumbs-parmesan mixture, being sure to coat thoroughly. Set side by side on paper towel-lined dish. Heat oil in a large skillet over medium-high heat until hot. Add eggplant slices making sure that it's not too crowded and reduce heat to medium. Cook for 3 to 4 minutes per side or until golden brown and tender. This in itself can be a separate dish, served with mayonnaise-garlic-lime dip or mayo-mustard-lemon, however you want your dip...

Sprinkle mozzarella cheese over eggplant during last minute of cooking to melt. While eggplant is cooking, combine spaghetti sauce and pepper flakes in a microwave-safe measuring cup. Cover with plastic wrap and cook at high power for 2 minutes or until heated through.Top eggplant with sauce and Parmesan cheese and serve.Alternatively, pour 1/3 marinara sauce in a baking dish. Layer 1/3 of the fried eggplant, then pour next 1/3 of the sauce. Sprinkle mozzarella cheese. Make another layer of eggplant, last 1/3 sauce and cheese. Then bake in preheated oven for about 10-12 minutes @ 375 deg F.
baking gives it a crustier texture which i liked. INDULGE! i got ♥♥♥♥♥ out of ♥♥♥♥♥ from dad!!!!! yay!:)
