what do you feed someone who loves loves loves but is limited to his intake of sweets? amazingly, there's a lot of options out there. and what we realized is that being a diabetic isn't as bad as we thought it'd be, as long as what you put inside your body is all in moderation. you can actually eat anything, not the way you used to-- but as they say, limit is key. and yes, even sweets!
just like this sweet dessert that i tested from a diabetic cookbook called Diabetic Desserts, hence the tag. it's supposed to have all less-sugar, less-fatty ingredients but i still had to tweak it a bit using splenda instead of regular granulated sugar and skipped the cholesterol-free egg substitute with regular ones. as i said, as long as he watches the amount of what he eats, i think he's good. he won't actually gobble up the whole thing, just a small bowl i'd say is fine. really easy to make too! so when the craving creeps in, this and more will take care of it. here's the original recipe...

HOW-TO
2 c fat-free [skim] milk
1/4 c sugar
3 Tbsp cornstarch
1/8 tsp salt
1/4 c cholesterol-free egg substitute
3/4 c shredded coconut
1 Tbsp reduced-fat margarine
1 tsp vanilla
1 tsp coconut extract
3/4 c fat-free whipped topping
1. combine milk, sugar, cornstarch and salt in medium saucepan. whisk until well blended and cornstarch is dissolved. cook over medium heat, stirring constantly, until mixture thickens and begins to boil. boil 1 minute; remove from heat.
2. whisk 2 T milk mixture into egg substitute in small bowl until well blended. slowly pour mixture back into saucepan, stirring rapidly to avoid lumps. cook, stirring constantly over medium heat 5 minutes or until mixture thickens. remove from heat.
3. stir in coconut, margarine, vanilla and coconut extract. pour into 6 [6-oz] ramekins; chill. top with whipped topping before serving.
makes 6 servings. and for presentation purposes, i used a clear dessert bowl on one and sprinkled a few more shredded coconut as garnish. should've been toasted i'm guessing for added color and flavor..next time! :)
