HOW_TO
oil or melted butter for greasing or muffin liners
9 oz./250 g rindless. smoked lean bacon
7 T sunflower oil
1 onion, finely chopped
2 c all-purpose flour
1 T baking powder
1/8 tsp. salt
freshly ground black pepper
2 large eggs
1 c buttermilk
Preheat the oven to 400 deg, F/200 deg. C. Grease a 12-cup muffin pan or line with muffin liners. Chop the bacon, reserving 3 strips to garnish. Cut each of the reserved bacon strips into 4 pieces.
Heat 1 T of the oil in a ckillet. Add the onion and cook for 2 minutes. Add the chopped bacon and cook for another 5 mins., stirring occasionally, until crispy. remove from heat and let cool.
Meanwhile, sift together the flour, baking powder, salt and pepper to taste into a large bowl.
Lightly beat eggs in a large pitcher or bowl, then beat in the buttermilk and remaining oil. Make a well in the center of the dry ingredients, pour in the liquid ingredients, and add the bacon mixture. stir gently until just well combined. DO NOT OVERMIX!
Spoon the batter into the prepared pan. Place one of the reserved bacon pieces on top of each muffin. Bake in preheated oven for about 20 minutes, until well risen, golden brown and firm to the touch.
Let the muffins cool in the pan for 5 mins. then serve warm. INDULGE!

good question…in my opinion, muffins are more dense compared to cupcakes..ika nga cupcakes are mini cakes, muffins naman is more like a flavored bread..and here’s a good one i found…
